In KSP the realistic forces that pilots are fighting when they pull up like that are not modeled, so there is is nothing resisting your attempt to pitch up and it will let you pitch up all the way over onto your back. Don't try a loop by going full throttle and pulling back hard. Don't try a tight turn by banking knife edge and pulling up hard. In KSP do NOT move the controls as far as they'll go. If the weathervane effect was modeled then there would be very strong forces resisting that attempt to face the flat of the plane into the wind. RTL version confirmed to get you as far as Duna.

In KSP it is very easy to get turned 30,40,50, degrees off from your direction of travel, and when you do that you hit a threshold where you lose all control and it flips around backward. It's also a heck of a lot easier to have a fatal stall in a plane in KSP than in the real world, again because of the lack of the weathervane effect. A follow-up post of my folding electric plane design. You have to pull the nose up a bit and use the rudder a bit while banked to cause a turn in KSP. In KSP if you bank in a plane that is balanced, you just slide sideways in a slip without changing facing. As this effect continues, the plane changes heading - the wings skew it sideways, which turns the nose that way, which changes the direction of the skewing, and so on in a feedback loop. If you bank to the right, the fact that it aims some of your lift to the right and therefore skews your velocity toward the right will in turn cause the plane to yaw toward the right to point more toward the direction it's going.

In the real world, it's hard for an airplane to have a prograde direction that differs from its orientation direction by more than a few degrees because the wind will force the orientation to turn into the wind like a weathervane. KSP airplanes don't turn like real world planes because there's no weathervane effect in the simplistic air drag model the game uses.
